Kitchen Carts and Islands - I need one (or the other)

I have been debating a project in my kitchen; a huge project that will make my husband’s eye twitch. I really need more work space in my kitchen. I keep coming back to kitchen carts and islands. Late at night, I will sit and ponder exactly how I could manage a kitchen cart or island of some type - and make it work with the limited space. I think of all the Christmas candy and cinnamon rolls and bread and cookies that I could make! I think of how much easier big family dinners would be if I could lay them out buffet style.  Or even a Breakfast Bar - oh the joy!

I would really like to add a permanent kitchen island but I do not think I have the room for that due to the way my kitchen is laid out. Then I thought about one of those rolling kitchen carts that I could roll out and then tuck back out of the way when I was done. The only problem I have with that is that I don’t really have anywhere to roll it back out of the way. I have managed to utilize every single square inch of space I have in this house.

When we moved here from Utah, I said I wanted an island in the kitchen of our new house. We looked at easily a hundred houses and I kept coming back to this one. It is a cottage style with a kitchen nook that I absolutely love. So much so that I convinced myself that I could live without the kitchen island, since I’d lived without one for so many years before. What is it they say about hindsight?
