My Favorite Pasta Salad

I cannot believe I have never posted this recipe here. It is the easiest recipe in the world and there are never any leftovers when I make it.

Ingredients:

1 pkg Garden Rotini (or the plain rotini works also)
1 pkg Hormel Pepperoni minis (you can use regular or turkey pepperoni too)
1 pkg Mozzarella Cheese (diced)
1 bottle Bernsteins Cheese Fantastico OR Bernstein's Cheese and Garlic Italian (both are delicious!)
Boil the noodles. Drain and set aside to cool.

Dice the pepperoni (or pour the bag of minis right into the bowl) and dice the cheese. When the noodles are cool, add the meat and cheese and mix well.

I use about 3/4 of the bottle of dressing. Stir it all up, cover and refrigerate 1 hour. When you're ready to serve, pour the remaining dressing on and stir once more.

Good eats!

Variations:  I've added chopped olives, onions, bell peppers and pepperoncinis and my family hated it each time. So, feel free to tweak and add and make this recipe your own.

TicketAmerica Sells Lots of Tickes. And They do it Across America!

I saw an ad for Ticketamerica the other day and I had no idea what, exactly, it was. So I went to my favorite place and searched it out. Turns out, Ticketamerica is like, the place to buy tickets for concerts but mostly, I was impressed by the vast array of sporting events I could get tickets for. And not just a few places, I could take a whole road trip and see the LA Lakers at the Staples Center and stop in quickly to visit my aunt and cousin in Orange County.

Then, I started thinking, what if I planned a road trip to see several sporting events during a wicked and wild period of time? I could go east and see the Redsox at Fenway Park and then stop in and see the Chicago Cubs at Wrigley Field.

Then, I could head west again and see the Suns at the US Airways Center and head north to catch a Washington Wizards game at the Verizon Center. I must tell my husband of this plan! He will be worried of course, because he has to foot the bill, but if I pitch it just right, I can hook him.

I just want to wear something comfy

Have I told you before that my 19 year old daughter is working toward her CNA? Well, she was working toward it when she was an assistant in a nursing home. The thing she liked best about that job was wearing nursing scrubs. She said they were comfortable and she could relax in them. This is HUGE from this particular daughter given her highest aspiration in high school was to work in a tanning salon. I’m so not kidding. Now she works for a medical insurance company and makes enough money that for the time being, she isn’t worried about that CNA degree. I tell her she will regret that but she’s 19. What 19 year old listens to her mom?

Sometimes I wish I worked in the nursing field because honestly the thought of wearing scrubs clothing every day, and being comfortable, every day, well, that is almost enough to get me past the idea that I would be touching people. Because I’ll be honest, if it weren’t for the touching people part and how that skeeves me out just a bit, I would totally be in the medical field. I like people. I want to help them. I just don’t want to touch them.

It really is too bad that I have to wear suits to work. I could totally pull off scrub tops and some jeans. I have seen the new tops, they are cute and they don’t look like everyone works for a pediatric dentist. There are even some stylish scrubs out there. If I could just get past that whole touching of people issue.
